Personally, I love anything by Yuki Kajiura. I also think Samurai Champloo has a good soundtrack. My favorite song from that show is called Mystline.

My favorite opening and closing has to be Cowboy Bebop's intro and outro. They are just so good. I mean I still listen to them to this day and I have a mix of Cowboy Bebop inspired Lo-Fi I put on several times a month to just chill and game to.

My favourite Anime OST by far is Gunslinger Girl's. The melody is perfect and it may not be everyone's kind of music but it's very soothing
